Our Cheese Education & Appreciation Experiences are NOT recommended for people with lactose intolerance or dairy allergies. No responsibility is taken for the ill effects people with these intolerances may experience in accidentally or otherwise ingesting cheese during our experience.
For bookings and payment to all classes and for Gift Vouchers, please click onto the 'Gift Voucher' page or contact us via phone or email to have us send you our banking details for a direct deposit or cheque.

Cancellation of a ticket must be made 72 hours prior to the class as produce is bought and preparation made for each booking. Ticket holders who wish to cancel their booking before this time may transfer their tickets to another class or receive a full refund. No refunds will be issued for cancellations within a 72 hour period.
Fort Denison Participants that miss the ferry will not have their tickets refunded. It is the responsibility of all participants to get to the meeting point on time and contact Claudia if they are experiencing difficulties.
We reserve the right to change details of the experience at any stage and will contact you regarding the slight changes to time/venue etc.

This is the course for patriots or, alternatively for those of you who need convincing that Australian cheeses have come a long way in recent years! This cheese course showcases the best of Australia’s cheese making talents alongside some great Australian wines.
Like all ‘McIntosh & Bowman’ courses, this class has an emphasis on farmhouse cheese and cheese produced on small scales by farmers who practice sustainable and traditional cheese making techniques. What better way to learn about Australia's growing boutique cheese industry than on our gorgeous Harbour whilst indulging in the best Australia has to offer? A Cheese class for the beer lover!!
Our Beer & Cheese experience has a new venue..... and what could be more appropriate than beer haven.... "The Local" on Flinders St in Surry Hills. This experience will feature on our program on the second Wednesday evening of every month.
Contrary to popular belief, beer is an incredible cheese accompaniment. There are many similarities between the science of beer and the science of cheese- and whilst we touch on technicalities of both- the class won't be structured with too much information for those who just want to be introduced to some great new flavours and combinations. Presenting alongside me each month will be a beer expert from The Local.
We will be showcasing a variety of beers- different styles and strengths and matching them with a selection of farmhouse cheeses.
So whether you are a traditionalist wine buff, sceptical of this match made in heaven, or a beer nut who loves great cheese, we are certain we can cater for even the most discerning and experienced palate.

Whisky Ambassador for Chivas Regal and The Glenlivet, James Buntin (previously of The International Whisky Experience) has come on board with McIntosh & Bowman for a series of Cheese & Whisky classes. James's distinguished palate and sound knowledge of the production and maturation methods of whiskey paint a magnificent picture of both the art and the science of the whiskey world.
An experience not to be missed; a variety of whiskys from 12, 15, 18 & 21 years maturation and the farmhouse cheeses that match perfectly.

This appreciation class is for the Cheese enthusiast who wishes to obtain the knowledge and experience required in order to speak more confidently about the food they love! This is the perfect opportunity to taste a wide variety of flavours and styles through sampling the 7 different types of Cheese and to have some common myths and misconceptions of the cheese world cleared up once and for all.
Over a two hour period, we will taste cheese of various types of milk- goat, sheep, cow and buffalo and experiment with basic Cheese and wine pairings.

Goats and Sheep have been milked since nomadic times, however it is only now that interest in specialty cheese is rising, and that more and more people are developing intolerences to dairy, that people are experimenting with Goat and Sheep milk cheese options.

Come and Make Cheese with McIntosh & Bowman Cheesemongers!
We are now offering Gift Vouchers & Tickets to our Cheese Making Workshops for the cheese lovers of our world who want to take their passion for cheese to the next level.
This is a 1 day, 6 hour cheese making workshop, with a full lunch and cheese course, wine, afternoon-tea and snacks. See the Events page of our website for course dates for you to choose from and book into.
This experience will teach 3 different cheese making recipes with cow’s milk;
· a table cheese (to be matured at home)
· ricotta and
· fetta
Participants are required to bring an apron and three tupperware containers to take your cheese home in; all other equipment will be provided.
All participants leave with tasting notes and cheese making recipes and the option to purchase home cheesemaking kits.
Cheese making couples have the option to work in groups of two to share the milk and the cheese they produce or alternatively work with individual buckets of milk to produce their own cheeses.

ADVANCED CHEESE MAKING WORKSHOP

SMH Good Food Month's Cheese Competition- Blind Tasting Event

Due to popular demand, we have decided to open this activity up to the public and showcase the activity as part of Good Food Month. Previously this is an event we ran exclusively for corporate team building activities and corporate client entertaining.
The afternoon is an action packed cheese experience where teams are positioned around the 6 tables distributed around the room, each table displaying two mystery cheeses and a mystery wine.
This is an extremely entertaining event to take part in. Participants can either enter in groups of 5/6 or register singularly.
After a welcome, quick intro and briefing of the rules, Claudia will equip participants with enough information on the 7 categories of cheese for those unfamiliar with a 'McIntosh & Bowman' Class to feel confident in the task that lies ahead.
Teams are limited by the time they can spend at each table, moving round each time the bell sounds. Participants have a group questionnaire to fill out as they try each cheese and wine; answering to the best of their visual and culinary ability.
The questionnaire tests the team's knowledge and palate at distinguishing between milk types (cow, goat, sheep and buffalo) and grape varietals, cheese types and origin. Each team moves around to all 6 tables trying all wines and all cheeses
Prizes are awarded for culinary skill- this activity challenges even the most discerning palates!!

We will cover the history and cultural differences in this style of cheese as well as processes in blue cheese making, the production techniques relevant to the blues we are tasting and advanced blue cheese and wine pairings.
