Our Cheese Education & Appreciation Experiences are NOT recommended for people with lactose intolerance or dairy allergies. No responsibility is taken for the ill effects people with these intolerances may experience in accidentilly or otherwise ingesting cheese during our experience.

Cancellation of a ticket must be made 72 hours prior to the class as produce is bought and preparation made for each booking. Ticket holders who wish to cancel their booking before this time may transfer their tickets to another class or receive a full refund. No refunds will be issued for cancellations within a 72 hour period.

Fort Denison Participants that miss the ferry will not have their tickets refunded. It is the responsibility of all participants to get to the meeting point ontime and contact Claudia if they are experiencing difficulties.

Below are the dates, times and availability of the classes we have on offer. We now DELETE an experience from the register once it has become fully booked.

'Great Blue Cheese of the World' (LIMITED SPACE LEFT)

When: 7pm-9pm, Tuesday 18th of November 2008

Where: Alchemy 731- (731 Military Road Mosman NSW 2088)

Cost: $90 Inclusive of GST

Not for the faint of heart, or the palate challenged! This class has a specific emphasis on Blue vein cheeses of both local and international origin. All the greats are covered- Stilton, Roquefort, Gorgonzola, Cabrales's cousin Valdeon and many more; all accompanied by wines which complement the style.

We will cover the history and cultural differences in this style of cheese as well as processes in blue cheese making, the production techniques relevant to the blues we are tasting and advanced blue cheese and wine pairings.

This event will be staged at Restaurant 'Alchemy 731'.

Alchemy 731is situated in the heart of Mosman on the Lower North Shore 15 min from the CBD of Sydney and 5 min from Balmoral beach. The restaurant is valued by it's clientele for its great food, impeccable service and reasonable prices. It has been recognised by the Australian Gourmet Traveller Restaurant Guide 2006, 2007 ,2008 and 2009 as one of the top 400 restaurants in Australia. It has also been awarded the Mosman Daily 2008 True Local Business Award for best formal dining restaurant.

The cuisine is French - British and is comprised of using classical techniques and adding a modern twist to make it one of Sydney's best value restaurants.

Whisky Ambassador for Chivas Regal and The Glenlivet, James Buntin (previously of The International Whiskey Experience) has come on board with McIntosh & Bowman for a series of Cheese & Whiskey classes. James's distinguished palate and sound knowledge of the production and maturation methods of whiskey paint a magnificent picture of both the art and the science of the whiskey world.

An experience not to be missed; a variety of whiskeys from 12, 15, 18 & 21 years maturation and the farmhouse cheeses that match perfectly.


CHEESE MAKING WORKSHOP with Barry Lillywhite & Claudia McIntosh (FULLY BOOKED)

When: 10.45am-5pm (for an 11am start), Saturday 22nd of November 2008

Come and Make Cheese with McIntosh & Bowman Cheesemongers!

We are now offering Gift Vouchers & Tickets to our Cheese Making Workshops for the cheese lovers of our world who want to take their passion for cheese to the next level.

This is a 1 day, 6 hour cheese making workshop, with a full lunch and cheese course, wine, afternoon-tea and snacks. See the Events page of our website for course dates for you to choose from and book into.

This experience will teach 3 different cheese making recipes with cow’s milk;

· a table cheese (to be matured at home)

· ricotta and

· fetta

Participants are required to bring an apron and three tupperware containers to take your cheese home in; all other equipment will be provided.

All participants leave with tasting notes and cheese making recipes and the option to purchase home cheesemaking kits.

Cheese making couples have the option to work in groups of two to share the milk and the cheese they produce or alternatively work with individual buckets of milk to produce their own cheeses.

More complex cheese making courses will be showcased in our 2009 program. These will include Blue Cheese, Mozzarella, Washed Rind Cheeses.

'French Cheese Class' (LIMITED SPACE LEFT)

Cheese Competition- Blind Tasting Event (BOOK NOW)

When: 1pm-3pm *NEW TIME FOR SATURDAYS, Saturday 13th December 2008

Where: Bayswater Brasserie, 32 Bayswater Rd Kings Cross

Due to popular demand, we have decided to open this activity up to the public. Previously this is an event we ran exclusively for corporate team building activities and corporate client entertaining.

The afternoon is an action packed cheese experience where teams are positioned around the 6 tables distributed around the room, each table displaying two mystery cheeses and a mystery wine.

This is an extremely entertaining event to take part in. Participants can either enter in groups of 5/6 or register singularly.

After a welcome, quick intro and briefing of the rules, Claudia will equip participants with enough information on the 7 categories of cheese for those unfamiliar with a 'McIntosh & Bowman' Class to feel confident in the task that lies ahead.

Teams are limited by the time they can spend at each table, moving round each time the bell sounds. Participants have a group questionnaire to fill out as they try each cheese and wine; answering to the best of their visual and culinary ability.

The questionnaire tests the team's knowledge and palate at distinguishing between milk types (cow, goat, sheep and buffalo) and grape varietals, cheese types and origin. Each team moves around to all 6 tables trying all wines and all cheeses

Prizes are awarded for culinary skill- this activity challenges even the most discerning palates!!

Pregnancy & Cheese

When: 4pm-6pm, Yet to be Confirmed Nov-Dec 2008

Where: Bayswater Brasserie, 32 Bayswater Rd Kings Cross

There are many misconceptions in the cheese world- One of them is that pregnant women can not eat cheese. Another is that pregnant women can eat cheese as long as is it pasteurised, regardless of whether that be soft, blue or fresh.

As a pregnant woman, I am now realising how much of a significant issue this is and how much conflicting and confusing material is published.

Due to all the research that I have undertaken on this topic and on cheese in general, I have developed this experience to promote cheese consumption during pregnancy and educate couples on the types of cheese that are safe to eat pre conception, during pregnancy and whilst breast feeding.

This class is a fascinating look at a variety of hard, aged cheeses that are suitable in pregnancy as well as the nutritious properties of cheese.

I am delighted to announce that we will have a guest speaker along for the session, Natropath and lecturer Tabitha McIntoshAdv Dip Naturopathy, Dip Nutrition, B Med Science, Post Grad Cert Nut Med, ATMS. Tabitha has a practice on Queen Street Woollahra and has become one of Ausytralia's leading naturopaths in women's health and reproductive systems. Non alcoholic beverages will be served at this experience alongside plenty of cheese accompaniments. Alcoholic beverages will be available for anyone who wishes to enjoy and also for those not actualy pregnant but who are accompanying a pregnant friend or partner!

'Goat & Sheep Cheese'

Goats and Sheep have been milked since nomadic times, however it is only now that interest in specialty cheese is rising, and that more and more people are developing intolerances to dairy, that people are experimenting with Goat and Sheep milk cheese options.

Come along and spend 2 hours trying the most gorgeous Goat and Sheep milk cheeses from both international and local producers along with some magnificent wine pairings.


Raw Milk Cheese Class- 10 Spectacular Cheese!!
